Yellow Rice

Long grain rice – 1 cup  (pick/wash) -  (Add 1-3/4 cup water, salt to taste and microwave for 22 minutes).  Remove and toss gently with fork..so that the grains are separate.

Butter – 2 tablespoons

Peppers (Red, yellow and green) cut into small pieces

1 big onion

1 green chilli 

Little turmeric

Add the butter in a non-stick vessel and saute the onion.  When transparent…add the coloured peppers and stir fry for two minutes.  Add the green chilly (slit) and turmeric.  Then add cooked rice in small batches.  Mix gently. Serve garnished with coriander leaves.
