Chicken and Vegetable Wraps

I searched high and low for Tortillas but could not find them.   So I made these wraps with our everyday chappatis and ta dah   !!!!! Chicken and Vegetable Wrap it was.

I had some left-over roasted chicken,   so all I did was cut a few slices and stir-fried them in some olive oil with a dash of white pepper.   Cut up a few peppers, fry potatoes, onions and lettuce and splashed some sour cream and cheese on the chappatis and rolled them up.

Very colourful and do I have to say delicious ?   They were so yummy and I had to scream at the boys at home to have some ‘patience’  as they had already gulped down their share and were waiting like eagles to attack the ones which I was photographing.   Greedy guys…..you will say,  but I have to admit that my fellas tolerantly waited till I was done and then it was over in a jiffy ;) .

4 cloves minced garlic
1/2 tsp oregano (optional)
1/2 tsp cumin powder
2 tbs olive oil
1 lemon
1 pepper cut into strips (I used 2 colours)
2 tomatoes
1 Potato -cut into strips and fried
2 onions cut into thin wedges
5-6 chappatis or tortillas
some sour cream

First deep fry the potatoes (add a little salt when frying)..remove and keep aside.

Shallow fry sliced onions and keep aside.

Shallow fry sliced peppers and keep aside.

In the same oil add minced garlic, stir fry the chicken, add oregano, cummin, pepper, juice of one lemon…and keep aside.

Shred lettuce and keep aside.

Fry chappatis or tortillas.  Remove on a plate and spread a little sour cream in the center, add onions, peppers, chicken, lettuce, fried potatoes, sliced tomatoes, garnish with cheese and coriander leaves.

Roll up into a wrap…and indulge.
