Pulav with Peas & Chicken

2 cups rice
½ cup peas
2 chicken breasts
1 Soup cube (Magi chicken)
2 Onion
2” Cinnamon Sticks  ( 2 pcs)
2 Tomatoes
2 Green Chilly
2 Cloves of garlic -crushed
1” piece ginger- crushed
A pinch of turmeric
1 teaspoon sugar
½  teaspoon pepper powder
2 cardamoms
1 bay leaf
Butter/Ghee
1 or 2 Capsicum
Salt to taste
1-3/4 cups water ( same cup that you used to measure the rice)

Wash rice and soak in water.

In a non-stick pan, put a little butter/ghee and add cinnamon, cardamom and bay leaf.  Add one onion and fry till light brown.  Add half tomato and fry for sometime.  Add a pinch of turmeric, 1 teaspoon sugar and the soup cube.   Put drained rice and stir fry taking care not to break the grains.  Add boiling water and salt to taste.  Cover and allow to simmer for 10 minutes..till the rice is cooked.  Take a fork and gently separate the grains.

Cut the chicken into small cubes or strips.  Pat dry.  In a bowl add one cinnamon and then add onion and fry till it is brown…add tomato, ginger, garlic, green chilly, pepper powder and a little salt.  Add the chicken pieces and keep stirring till all the water is dried.  Check if chicken is cooked, add seasoning if required.    Add the capsicum and frozen peas and toss in and stir fry till they are cooked.  

Add rice in batches and into the chicken mixture.  Gently toss so that it is well mixed.  Dish out in a flat platter and garnish as required.
