Rava Dosa has been made on the special request of our Member and ardent supporter, Meena Noronha. Hope you make it and relish it Meena !!!!!
Rava – 1/2 cup, Rice flour – 1/4 cup, Maida – 1/4 cup, Onion – 1 small, Coriander leaves –few, Curry leaves – 7-8, Green chillies – 1, Salt – 1/2 teaspoon, Water – 3 cups, little oil & ghee.
Finely chop the onions, green chilli, coriander leaves and curry leaves. Whisk together with a fork the rava, flours, salt, water and chopped ingredients in a bowl. Soak for about 30 minutes. This is a very runny and thin batter. Heat a non-stick frying pan/dosa pan and smear oil on the pan with a tissue.
Ensure that the pan is very hot. Stir the batter well and splash the batter on the hot pan with a medium sized ladle. Do not stir or spread. Fill in any gaps with more drops of batter and tilt pan to left and right to ensure that it is even all over. Sprinkle a few drops of ghee over the dosa and when the sides start lifting, toss to the other side and fry till done. {If your first one does not look good, worry not, the pan must have not been hot enough}. Serve immediately with chutney and sambar or dal.
Smear the pan again with the oil soaked tissue and fry the dosas one by one making sure that you stir the batter before spreading on the pan. You can make about 12-14 small sized dosas out of the recipe mentioned about.
